My new, can't miss idea!   A Tastier Than It Looks Cookbook. .. as featured on the Facebook! clockwise from left:  Empty pancake plate (plenty of good recipes for pancakes. I like this one but I separate the eggs and whip the whites ).  Top (white gunk) =1 part mascarpone cheese, 1 part yogurt OR sour cream, some sugar, lemon peel, lemon and lime juice. Far right --cameo appearance a banana (no t appearing in this recipe but you can add it to sauce if you want. I bet it would be tasty.) Bottom right (red sauce) = about 1.5 cups raspberries, splash of oj, more lemon and lime peel and l n l juice. Also sugar to taste. 1-2 tablespoons corn starch. Cook and cook and stir while you cook.  The lumps are partially cooked peaches--I throw in peeled chunks toward end of sauce cooking (don't like mooshy peaches)  Plate the pancake (don't you love that verb? Yes, you do). Glop on white gunk. Glop on fruit sauce. I can see this working in a crepe...

baked good

After the angst comes baking of the comfort food. We're looking for easy peasy because we're gloomy, not creative, at the moment. Except--hold on--I was creative enough to come up with a recipe yesterday. You must start out with a nearly empty jar of Trader Joe's morello cherries in light syrup. Put a bunch of the cherries in something like a pie. Be left with about a cup of cherries bobbing around in lot of that syrup. Because you're cheap and those cherries are pricey, feel reluctant to dump the light syrup. (I use it to reconstitute dried fruit too--simmer dried fruit with the stuff) Ok, recipe time. 1 box of white cake mix, minus 6 Tbl (you can probably go for the whole box, but ours was missing 6 Tbl used in another recipe) 1 cup of TJ left over light cherry syrup (a bit more if you have a whole box of mix) 1/4 cup oil (a bit more if you have a whole box) 3 eggs. left over cherries (about a cup, or more if you have more) Put it all in the mixer and le...

kashi golean snack bars

Okay. I'm making these a couple of times a week for school treats. I hope they're reasonably healthy. 3 or 4 cups Kashi Golean cereal 1 cup oats 1/2 dried cranberries 1/3 cup raisins 1 cup sliced almonds 3/4 cup brown rice syrup 1/4 cup brown sugar 3/4 cup peanut butter Put fruit and oats into a food processor--and the almonds if they're huge. heat the syrup and sugar until they are boiling. Turn off heat. Add peanut butter (and the original recipe has some vanilla) Stir to blend Add fruit and cereals. mix well. Usually I end up using my hands. Press with hands into 9x13 pan that's been sprayed with fat stuff. Put this in the fridge and then cut up and hide from the boys so they're for freaking SCHOOL snack.

Thursday Thirteen--Happy Chocolate Pudding Day!

Mike's basic recipe: 2 cups milk 1 cup sugar 3 Tablespoons cornstarch 3 ounces unsweetened chocolate. splash of vanilla. Whisk this together--well, you can't whisk in the chunks of unmelted chocolate, but you get the idea. Cook, stirring constantly, over medium to medium high heat. This will take several years--or it'll feel that way. Don't stop stirring and don't turn the heat too high. Once it starts making volcanic blopping bubbles, turn down the heat and cook (stirring! never stop stirring!) for another minute. Eat hot or cold or warm the way it is or with one/some of the THIRTEEN VARIATIONS. 1. chocolate chips sprinkled on top . They melt a bit. Yum. 2. a couple of teaspoons of butter added after you take stuff off heat. Stir it in. I don't think it adds enough to be worth the extra calories, but some people like it a lot. 3. A couple of teaspoons of Kahlua 4. Or a tinge of mint (I say bleh , but some people like it.) 5. Grand Marnier 6. use a tad less...

Thursday Thirteen--Recipes I use (or witness)

I'll cheat and steal some of my own. 1. Easy flan recipe. (celiac approved) 2 another chocolate cake (just like yesterday's recipe, but less complex. also good for celiacs) 3 . My way too healthy healthy fruity muffins. (NOT celiac safe) 4. Best scones, says Jon F and maybe even Karen. Maybe. Someone liked them, anyway. 5. Alton's lemon meringue pie . With a tad more cornstarch. (don't do the crust and you got a good celiac one) I'm realizing mostly desserts and not a lot of regular food here. That regular stuff I just cook, see. No recipes needed. I cook dinner every damn day and I'd go nuts if I had to look at recipes all the time. (besides. box' o' pasta. Add to boiling water. Cook until tender ) But I'll write a couple down. Two easy uses for fake crab: 6. mix flaked crab with lemon juice, salsa, chopped up avocado. Yum. Cilantro and cumin if you have them. 7. crab with peanut stuff--all mixed with cooked linguine. Standard peanut sauce...
